An old Hungarian variety that has only survived in Badacsony and is now essentially found only here. It was once called the aristocrats' grape because its cultivation is time and labor-intensive, and it is notoriously low-yielding. Since it only has female flowers, we alternate planting it with its pollen partner, the Rose Stone, in the vineyard.
We spontaneously ferment it in a steel tank, then age it in a barrel for 3 months. It is worth storing a few bottles deep in the cellar, as, like Furmint, it belongs to those rare white varieties that are especially worth aging.
