Fruit brandies can be regarded as the classic drinks of Hungary. Documents drawn up as early as in the 14th century already refer to fruit brandies. The climatic conditions of the Carpathian Basin are conducive to growing drupes and apples. These fruits have such a high natural sugar content that the mash by the end of fermentation reaches the alcoholic strength required for distillation, thus there is absolutely no need to add any sugar or any alcohol. The main moments of producing fruit brandies: selection and cleaning of the fruit, taking out the stones in the case of drupes, grinding the fruit, fermentation in a closed system and finally double distillation.
